Submit your recipeThis was good but instead of baking it I would recommend slowly adding in the vegetable broth ladle by ladle stirring constantly until fluffy🤗
I definitely recommend cooking the risotto in the traditional way on the stovetop (slow and steady wins the race!) and also adding a splash of white whine at the beginning. I topped with pine nuts and parsley and I think it’s the most delicious thing to come out of my kitchen!
At 50 mins add in chopped, slightly cooked bacon. So good

Such a great recipe! I used about 1/2 cup of dry white wine at the end and reduced the amount of vegetable broth accordingly. Super delicious!
I made mine on the stove but it still came out great. Love it! It will be one of my go to vegetarian meal.
Mine turned out mushy, kinda like mashed potatoes but the flavor is good. To avoid this I would recommend preparing the rice in the traditional way, by adding a ladle of broth to the rice at a time. Also maybe consider adding pine nuts for added crunch:).
i took the other tips’ advice and made it on the stove, i recommend adding almonds or pine nuts on top for some crunch!
I added a whole large squash and thought it was a much better ratio of squash to rice.
👍 came out just like the recipe
I roasted the butternut squash following the recipe but cooked the rice in my instant pot! Sauté setting for the onions and garlic/rosemary. Then added the veggie stock and rice and cooked on low pressure for 5m. Quick release the pressure and continue following the recipe. It was so yummy and I topped it with nutritional yeast and Chili powder.
Turned out really good but took a long time to cook on the stove, over an hour, but worth the wait ☺️ added rosemary instead of sage
Low Fodmap: no onion, no garlic. All oil used, was garlic-infused oil. Fried bacon and sage leaves separately, 1 stalk finely chopped celery fried with the rosemary. Gluten-free stock with asafoetida, made the risotto in the traditional way on stovetop, ladling the stock. Also added roasted pine nuts. Delicious
