In a medium bowl, combine the cabbage and salt. Toss lightly. Let sit for 10 minutes to withdraw some moisture. Place a colander over a separate bowl. Transfer the cabbage to the colander squeeze out any moisture from the cabbage. Discard the water.
In a large bowl, combine the drained napa cabbage, ground pork, shiitake, scallions, sesame oil, ginger, remaining teaspoon of salt, and white pepper. Mix well with your hands.
Put a tablespoon of filling in the middle of a dumpling wrapper. Using your finger, lightly wet half of the outer rim with water.

Fold the wrapper in half. Using your fingertips, make pleats to seal the dumpling. Repeat with the remaining wrappers and filling.
In a large non-stick pan, heat the oil over medium heat. Place 8 dumplings in the pan and fry until the bottoms turn golden brown, about 5 minutes. Add ¼ cup water (60 ml) and cover. Cook for 7-10 minutes, or until the filling is cooked through. Repeat with the remaining dumplings.
I used ground chicken instead of pork and couldn’t find dumpling wrappers, so I used wonton wrappers. Absolutely delish!!!

If you don’t like mushrooms I recommend putting carrots in them, very thin slices around 1 inch long. So so good!!

Tasted great. I would suggest making a soy sauce dip. What I did was I added
2T soy sauce
1T rice vinegar
1t sesame oil
Cut up scallion
And mixed it into a large bowl.
The recipe was really easy to make, and fun for the whole family.

Made it with lamb and chicken. Also, added cilantro and steamed for 10 min. Come out amazing!

I made this vegetarian by using Gardein’s ground-like beef; unfortunately, I did not measure out the ginger, so it’s a little stronger than the recipe instructs. I’m hoping after it’s cooked, the flavor will balance out. This is a wonderful recipe — I had not even finished making the dumplings, when daughter gave it two thumbs up! Thank you for sharing!

The first time I made these, I couldn’t find either dumpling wrappers or ground pork, so I substituted the ground pork for ground beef, and wonton wrappers for the dumpling wrappers. They turned out AMAZING and my family loved them, so I made them a second time. This time I was able to find the ground pork though, and they turned out even better.

Might cut down on the amount of soy sauce next round!

These were so good, however for mine although I followed step-by-step I found that the white pepper was a little too much so next time I have to use less. But other than that great recipe! 🥟

Made these with square wrappers and worked great! I did have to change up the cook time after the first batch because the bottoms were slightly burned. For the rest I cooked total of 5 min, flipping from bottom and side to side, then adding water and covering for 7min

Made them in Germany where we were a little short on the correct ingredients but we decided to steam the dumplings and they were great after 10 mins (May depend on dumpling size). For dipping sauce, it was too much sesame oil, maybe half the amount would be better.

I work at a Michelin star restaurant and my biggest tip for all you amateur home cooks is to not use ketchup as a dipping sauce because it’s acidity overpowers the subtle notes of ginger.
