Preparation
In a bowl, add the potatoes, and fill the bowl with water until the potatoes are covered. Microwave on the potato setting for 10 minutes. The potatoes are done when you can pierce through them with a fork. Leave in water, and set aside until ready to use.
In a large pot over medium heat, add the olive oil and 3 tablespoons of curry powder, and mix thoroughly.
Add the cubed chicken and the onions to the pot, and mix thoroughly until chicken is cooked through, about 5 minutes.

Add the peas, red bell peppers, green beans, carrots, and jalapeño pepper, and mix thoroughly.
Add the reserved potatoes, along with 6 cups (1.4 L) of the water the potatoes were cooked in to the pot, and mix thoroughly.
Add the salt, pepper, and the rest of the curry powder, and mix thoroughly.

Bring the curry to a boil, cover, and reduce heat to low. Simmer the curry for one hour on low heat. Remove from heat.
This is too good to not make. For a quick fix without the fresh veg, use frozen (ie green beans). Used chicken thighs instead of breasts and nothing changed. It might feel watery, but all the better to get infused with rice AND this gets better with time. Also, it makes a TON so use a huge stockpot while making. Enjoy!

I just thickened the gravy with a little flour and used a whole chicken but kept the rest the same. Wonderful dish!

I took the advice of others and seasoned the chicken a little. I only used 1C of potato water and 2C of chicken broth, unfortunately it was still very watery. During the last 15 minutes of cooking I added cornstarch to thicken up the broth. Overall the dish is pretty tasty but more seasoning is needed to make it a bit more flavorful.

I adapted this recipe for the instant pot and used half the water. It turned out great!
In sauté mode, I cooked the onion in olive oil until it was translucent, then mixed in the spices and chicken. I added the remaining vegetables and 3 cups of water, cooked in high pressure for 10 minutes with 10 minutes slow release.

This is REALLY unauthentic and very misleading 'Nigerian' cuisine. It's disappointing (not to mention irresponsible!) to see this recipe being categorised as such. Nothing even closely resembling this dish exists in Nigeria. If you want AUTHENTIC Nigerian cuisine try Pounded Yam and Egusi Soup, then come and talk to me about authenticity.

I’ve made this twice now and it’s been fantastic. Both times I’ve added some Thai red curry paste to help thicken the sauce and the second time I dumped in about a cup of leftover uncooked quinoa I had laying around and that really helped thicken it. A bit of turmeric doesn’t hurt either, plus a dash of cinnamon.

It’s basically a really watery, very curry-tasting soupy stew. Very disappointing. It needs way too much adjusting to become the dish you expect it to be. Reduce the water by at least 2/3, add quinoa or couscous to thicken along with some additional spices for flavour. Which is basically a whole new recipe.

Would defiantly make this again, love it.
The one thing I did add that wasn’t on the recipe was double cream & many other’s have recommended to do so. Winner!! 👍🏽

Loved this recipe😍 will def make again.
I only used 1/4 the amount of the recipe and it turned out perfect, I don’t know why it wasn’t watery even though I put 1/4 the amount of water written...

This was really tasty but something was missing in the recipe to make the sauce thicken. It ended up being too watery, and I used exact measurements. I added some cornstarch, but that did not quite do the trick. I think the water was too much, and the chicken releases water as well, so it ended up being more a soup than a stew.

Easiest chicken curry! Add less water for sure. I also mashed one potato up and added to the curry, it thickened it up. Delicious with rice
