Submit your recipeI really like this version of ratatouille. I’d say you need to take time to do the mise en place. Also, depending on the size of the vegetables you will have to take more time to cook them to get them to the right consistency. I would also add a bit of garlic and salt to the quinoa. By itself it is pretty bland. Some herbs work well with it too.
So yummy!! Made it for lunch for the week. The prep work is no joke, lots of chopping before you can actually start the cooking process. Plan ahead!
Start the quinoa boiling first so everything is finished and ready to serve at the same time!

Next time I will for sure skin my eggplant. The skin gave it a weird texture. I’ll also add a bit of tomato paste to give it a bit more flavor! So good! So easy!
This this was incredibly easy to make! Don’t put too much oil at each step to keep it from getting too heavy.
I always add an 8 oz. container of baby bella or white mushrooms- cubed- at the same stage as the eggplant to add a bit more meatiness and keep to a family ratatouille recipe.
This makes way more than 2 servings, and was enough for me to have for lunch for a week!
Delicious! Chop the veggies small & thin, it’s easier to cook & eat!
I really loved this recipe, it’s vegan too 😍
Definitely cut your veggies in small cubes, don’t skip that step!! I cut mine in not small enough pieces, it was still very delicious but I have a feeling it’d be better if cut thinner and smaller.
So I had to improvise a lot. Instead of tomatoes I used crushed tomato, instead of lemon juice I used lime juice, used basil herb instead of leaf form, and instead of peppers I used potatoes. But all in all I’d rate 7.5. Taste was amazing, easy to substitute items for, and was fast to make.
It took a while to chop all the ingredients but it tasted great in the end!
