Ingredients

1 cup cashews (130 g) - 1 can lite coconut milk

¼ cup maple syrup (85 g) -
¼ cup water, add more as needed for desired consistency (60 mL) - 3 pitted dates

¼ teaspoon allspice - 2 vanilla bean pods, seeds scraped
-
1 teaspoon fresh nutmeg, to taste - spiced rum, or bourbon, to taste, optional
- 6 cinnamon sticks, to serve

Preparation
- Soak cashews in water for 30 minutes. Rinse, then drain in a colander.
- Add cashews, coconut milk, maple syrup, water, dates, allspice, vanilla bean seeds, nutmeg, and rum (optional) to a blender. Blend until completely smooth.
- Refrigerate the mixture until ready to enjoy. Refrigeration will thicken the veggnog. Add more water and blend again for a thinner consistency.
- Serve chilled with nutmeg, and cinnamon stick.
- Enjoy!

I added more water because it was WAY too thick with just 1/4 cup water ( add a 1/2 cup instead ). I would say it doesn’t taste fully like eggnog but it was really good. Overall it was easy to make and delicious.

there is a lot of controversy on this tip page about how they should just add milk or don’t try because there’s no eggs. that’s the whole point of the recipe. some people have allergies and cannot eat non-vegan foods, and some chose not to, so this recipe was for them. it was made without certain ingredients so that those people can still enjoy “eggnog” :)

Really nice. Vanilla essence worked fine, no need to splash out on vanilla pods. Also honey instead of maple syrup also good!

You guys, it’s vegan the can’t have milk and a lot of other things. Don’t hate if you personally don’t like it, and if you don’t like say something like “ I personally didn’t care for it because” etc...) if you don’t understand, that is what google is for.
