Watermelon Cucumber Cooler

Ingredients

for 1 serving

  • 1 cup
    sugar (200 g)
  • 1 cup
    water (240 mL)
  • 1 cucumber, sliced
  • ice
  • 2 oz
    gin (60 mL)
  • 1 ½ oz
    watermelon, juiced (45 mL)
  • ½ oz
    lime juice (15 mL)
  • 1 oz
    cucumber simple syrup (30 mL)
  • club soda, to taste
  • 1 slice cucumber, for garnish

Preparation

  1. In a small pot over medium heat, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar completely.
  2. Remove the pot from the heat and stir in the cucumber. Let steep, covered, for at least 4 hours or up to overnight.
  3. Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much syrup as possible. Store in an airtight container in the refrigerator for up to 1 month.

  5. In a cocktail shaker filled with ice, combine the gin, watermelon juice, lime juice, and simple syrup. Shake vigorously for 20 seconds.
  6. Strain into a glass filled with ice and top with club soda.
  7. Garnish with the cucumber slice.
  8. Enjoy!
