  • 2 granny smith apples
  • ¼ cup maple syrup (60 g)
  • 1 ½ tablespoons coconut oil, melted
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger

Crumble Topping

  • ½ cup rolled oats (40 g)
  • 2 tablespoons all purpose flour
  • 2 tablespoons raisin
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • vanilla ice cream, for serving
  • caramel sauce, for serving

Preparation

  1. Preheat the air fryer to 350°F (180°C).
  2. Cut the apples in half through the stems, then use a spoon to scoop out the core and seeds.
  3. In a small bowl, mix together the maple syrup, melted coconut oil, cinnamon, nutmeg, and ginger.
  4. Brush the apples all over with the spice oil, spooning any remaining oil into the hollow cores.
  5. Set the apples, cut-side up, in the air fryer basket and cook until tender and the tops are golden brown, about 8 minutes.
  6. Meanwhile, make the crumble topping: In a small bowl, mix together the oats, flour, raisins, melted coconut oil, maple syrup, cinnamon, nutmeg, ginger, and salt.
  7. Spoon the crumble topping into the center of each apple half, dividing evenly. Air-fry for another 1–2 minutes, or until the crumble is golden brown.
  8. Transfer the apples to plates and serve warm with vanilla ice cream, a drizzle of caramel sauce, and a dusting of ground cinnamon.
