Apple Cider Funnel Cake

Ingredients

for 4 servings

  • 3 cups
    flour (385 g)
  • ½ teaspoon
    salt
  • 1 tablespoon
    cinnamon
  • ½ teaspoon
    allspice
  • 2 teaspoons
    baking powder
  • 3 eggs
  • ¼ cup
    sugar (50 g)
  • 1 tablespoon
    vanilla
  • 1 cup
    apple cider (235 mL)
  • 1 cup
    whole milk (235 mL)
  • vegetable oil, for frying
  • powdered sugar, for dusting
  • ice cream, optional

Preparation

  1. Combine flour, salt, cinnamon, allspice and baking powder in a bowl.
  2. In separate bowl, combine eggs, sugar and vanilla. Blend.
  3. Add apple cider and milk. Blend until well incorporated.
  4. Slowly add the dry ingredients to the wet ingredients, blend until you have a smooth and creamy batter.
  5. Heat vegetable oil in a deep skillet.
  6. Transfer the batter into a zipper bag and trim the corner.
  7. Pour batter in funnel cake shapes into the hot oil. Once golden brown, flip and cook the other side (1 min max).
  8. Remove and drain on paper towel.
  9. Dust with powdered sugar and top with ice cream.
  10. Enjoy!
