April Fools’ Day Mexican Pizza

Perfectly seasoned ground beef and cheese between two crispy flour tortillas, with a fresh pico de gallo salsa, is what this dish appears to be...until you take a closer look. Chopped walnuts and chocolate stand in for the beef, colored shredded coconut takes the place of cheese, and strawberries, apples, and kiwi make up the salsa. Strawberry jam “pizza sauce”, blueberry “olives”, and whipped cream “sour cream” round out the pie. Your guests will be fooled, but they won’t be mad!

Ingredients

for 2 servings

Cinnamon Sugar Tortillas

  • 4 flour tortillas, 8 in (20 cm)
  • ½ stick unsalted butter, melted
  • 1 tablespoon ground cinnamon
  • ¼ cup granulated sugar (50 g)

Ground “Beef”

  • 3 cups walnut halves (300 g)
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 4 oz dark chocolate (115 g), melted

Shredded “Cheese”

  • 3 cups sweetened coconut flakes (300 g)
  • 1 drop yellow gel food coloring
  • 1 drop orange gel food coloring

Fruit “Salsa”

  • 2 kiwis, peeled and finely diced
  • 1 cup strawberry (150 g), stemmed and finely diced
  • 1 honeycrisp apple, peeled and finely diced
  • 2 tablespoons fresh mint leaf, chopped

Blueberry “Olives”

  • 10 fresh blueberries

Assembly

  • 1 cup strawberry jam (325 g)
  • whipped cream, for garnish
  • fresh mint, chopped, for garnish

Preparation

  1. Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper and top with wire racks.
  2. Make the cinnamon sugar tortillas: Brush both sides of each tortilla with the melted butter and sprinkle both sides liberally with the cinnamon and sugar. Arrange 2 tortillas on each of the prepared baking sheets.
  3. Bake the tortillas, flipping halfway, until slightly crisp, 10–15 minutes.
  4. Make the ground “beef”: Add the walnuts, sugar, and cinnamon to a food processor. Pulse several times until the walnuts are broken down to the consistency of ground beef. Transfer to a large bowl, add the melted chocolate, and fold with a rubber spatula until the walnut mixture is fully coated in the chocolate. Set aside until ready to assemble the pizza.
  5. Make the shredded “cheese”: In a medium bowl, mix the shredded coconut with the yellow and orange food colorings until the coconut is evenly colored. Set aside until ready to use.
  6. Make the fruit “salsa”: Add the kiwi, strawberries, apple, and mint to a medium bowl and stir to combine. Set aside until ready to use.
  7. Make the blueberry “olives”: Carefully slice each blueberry in half. Punch out the center of each half with a small round pastry tip to resemble a sliced olive. Set aside until ready to use.
  8. To assemble, place a cinnamon sugar tortilla on a work surface. Top with half of the ground “beef” mixture and spread evenly to cover the tortilla. Sprinkle with a generous handful of shredded “cheese”. Top with another tortilla and spread ½ cup of strawberry jam all over the tortilla. Top with another generous sprinkle of shredded “cheese”, a large spoonful of fruit “salsa”, a dollop of whipped cream, a sprinkling of chopped fresh mint, and blueberry “olives”. Repeat with the remaining ingredients.
