Baby Pitas

Ingredients

for 6 servings

  • 4 cups water (3.8 L)
  • 1 cup warm water (240 mL)
  • 1 cup almond milk (240 mL), or warm milk
  • 1 teaspoon salt
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons dry yeast
  • 1 teaspoon sugar

Preparation

  1. Activate yeast by mixing it into warm water with sugar until bubbles form. Once activated, mix with sifted flour. Then, add the rest of the ingredients, (salt last).
  2. Knead dough well, 10 to 15 minutes. This should create a slightly sticky dough.
  3. Drizzle oil into the bowl and let rise for 2 hours, covered, with plastic wrap and a towel.
  4. Roll dough into balls. Then, form these balls into 1.5-inch (3 cm) baby pitas (should not be too thin).
  5. Cover dough balls with a towel and let rest for 10-15 minutes.
  6. Preheat the oven with a pizza pan inside on 500°F on the bottom rack and place 3-4 pitas at a time. When puffed, flip and spin.
  7. Cover with a towel to keep soft. When ready, let cool and serve.
  8. Serve with homemade hummus or dip in olive oil and za'atar!
