Berry French Toast Bake

Ingredients

for 6 servings

  • 10 slices whole wheat bread, cut into cubes
  • 8 oz
    raspberry (250 g)
  • 8 oz
    blackberry (250 g)
  • 10 strawberries, trimmed and sliced
  • 8 oz
    blueberry (250 g)

Egg Mixture

  • ½ cup
    water, warm (120 mL)
  • 3 tablespoons
    honey
  • 5 eggs
  • 2 ½ cups
    milk, of choice (355 mL)
  • 2 teaspoons
    vanilla extract
  • 2 teaspoons
    cinnamon
  • 1 pinch salt

Garnish

  • greek yogurt, as desired
  • maple syrup, as desired

Preparation

  1. Preheat the oven to 350˚F (180˚C).
  2. In a large bowl, whisk together warm water and honey.
  3. Add eggs, milk, vanilla extract, cinnamon, and salt. Whisk.
  4. Place bread cubes into a well-greased cast-iron pan.
  5. Pour the egg mixture over the bread cubes and submerge all of the bread cubes. Let soak for 20 minutes.
  6. Arrange the fruit on top.
  7. Bake for approximately 1 hour.
  8. Serve with yogurt and maple syrup.
  9. Enjoy!
