Broccoli Balls

Ingredients

for 1 serving

  • 1 cup broccoli (90 g)
  • 2 eggs, divided
  • ½ cup onion (75 g), chopped
  • 2 tablespoons feta cheese
  • salt and pepper, to taste
  • ½ cup panko breadcrumbs (55 g), divided
  • ½ cup flour (60 g), divided
  • oil, for cooking
  • ricotta cheese, to serve

Preparation

  1. Chop and boil the broccoli until soft. Strain.
  2. Add one egg, the onion, feta, salt and pepper, HALF the breadcrumbs and HALF the flour until a thick, dough-like consistency forms.
  3. Scoop into balls and refrigerate for 30 minutes.
  4. Coat the cooled balls in the remaining egg, then the flour, then the breadcrumbs.
  5. Air fry for or bake in a preheated 350°F oven for 10 minutes.
  6. Serve with ricotta.
