  • ½ red onion, chopped
  • 20 cherry tomatoes, halved
  • ½ cup roughly chopped fresh parsley (20 g)
  • ½ cup chopped fresh mint leaves (15 g)
  • ¼ cup olive oil (60 mL)
  • ¼ cup apple cider vinegar (60 mL)
  • ¼ cup lemon juice (60 mL)
  • salt, to taste
  • pepper, to taste
  • ¼ cup crumbled feta cheese
