- ½ red onion, chopped
- 20 cherry tomatoes, halved
- ½ cup roughly chopped fresh parsley (20 g)
- ½ cup chopped fresh mint leaves (15 g)
- ¼ cup olive oil (60 mL)
- ¼ cup apple cider vinegar (60 mL)
- ¼ cup lemon juice (60 mL)
- salt, to taste
- pepper, to taste
- ¼ cup crumbled feta cheese
