Chickpea Snacks (Sundal)

Ingredients

for 4 servings

  • ½ lb chickpeas (250 g), soaked in warm water for 3 hours
  • 2 teaspoons olive oil, or peanut oil
  • 1 teaspoon black mustard seeds (3 g)
  • ½ cup red onion (100 g), chopped finely
  • 1 ½ cups curry leaves (25 g), and coriander leaves, chopped
  • 1 tablespoon salt (10 g)
  • ½ tablespoon turmeric powder (5 g)

Preparation

  1. Pressure-cook chickpeas. Then, heat oil in a saute pan on medium heat.
  2. Add the mustard seeds and fry until they pop. Then, add the onions and curry leaves to the pan and roast until onions are fragrant.
  3. Drain the chickpeas and add to the frying pan on medium-high heat. Roast for 5-10 minutes.
  4. To this mixture, add salt and toss mixture in coriander leaves and turmeric powder.
  5. Serve hot.
