- 6 idaho potatoes, peeled (about 4 pounds)
- 1 tablespoon kosher salt, plus more to taste
- 3 sticks unsalted butter, melted
- 8 oz sour cream (225 g), room temperature

Preparation

- Slowly stir in the sour cream and melted butter. Season with more salt to taste.
