  • 1 head cauliflower, chopped
  • 1 tablespoon
    coconut oil, or preferred cooking oil
  • ¼ cup
    coconut milk (60 mL)
  • 1 tablespoon
    lime juice
  • 1 lime, zested
  • fresh cilantro, for garnish

Preparation

  1. In a food processor, pulse the cauliflower until it reaches your desired “rice” consistency.
  2. In a large skillet over medium heat, heat oil, then add cauliflower rice and let cook for 5 minutes., stirring occasionally.
  3. Add coconut milk, lime juice and lime zest, combine well and allow to cook until the liquid has evaporated.
  4. Garnish with cilantro.
  5. Enjoy!
