Crispy Golden Chicken With Pasta

Ingredients

for 5 servings

  • 1 lb chicken breast (455 g)
  • 1 lb penne pasta (455 g)
  • ½ lb mozzarella cheese (50 g)
  • 2 tablespoons all purpose flour
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 bell pepper, sliced
  • 2 tomatoes, sliced
  • 1 white onion, sliced
  • ⅓ cup olive oil (70 mL), (for dressing pasta)
  • ½ teaspoon garlic powder
  • 2 tablespoons soy sauce
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Preparation

  1. Cut chicken breast into medium-sized pieces.
  2. Mix all seasonings and spices together and toss chicken in this mixture in a plastic bag. Refrigerate for 1 hour.
  3. Fry chicken breast in olive oil and set aside once fried.
  4. Boil the pasta in a pot for 15 minutes (until al dente).
  5. Add boiled pasta to a pan and mix in mozzarella cheese.
  6. Add the vegetables mentioned above and toss lightly with salt and pepper to taste. Toss this mixture in ⅓ cup (80 ml) olive oil.
  7. Fold in chicken breasts and top with more mozzarella if desired.
  8. Broil for 15 mins. Server warm.
