Crock Pot Chili

Ingredients

for 5 servings

  • 1 lb ground beef (455 g), (ground venison or turkey will work too)
  • 8 slices bacon, thick-sliced - (cooked, drained on paper towels, then coarsely chopped)
  • 2 teaspoons butter
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cans red kidney bean, plus juice from cans
  • 3 packets chili seasoning, 1.25 oz
  • 1 can petite diced tomatoes, drained and rinsed, 14.5 oz
  • 1 can diced tomato, with green chillies, drained and rinsed, 10oz
  • 2 cans plain tomato sauce, 15 oz
  • ½ cup beef broth (120 mL), or water
  • 2 tablespoons maple syrup
  • 1 tablespoon honey

Optional Toppings:

  • sour cream
  • green onion, chopped
  • Frank’s Red Hot® Sauce
  • shredded cheddar cheese

Preparation

  1. Brown your choice of ground meat in a large skillet on medium-high heat. Stir often till thoroughly cooked, Drain in a small-holed colander, rinse with hot water to get rid of excess grease, drain. Place meat in the crockpot (Don't turn the crockpot on until the rest of the ingredients are done).
  2. Heat butter and oil In a skillet over medium-high heat. Cook and stir onions and bell peppers for 5-6 minutes, add garlic, and cook 1 minute until fragrant. Pour onions,
  3. peppers for 5-6 minutes, add garlic, and cook 1 minute until fragrant. Pour onions, peppers, garlic into the crock pot and turn the crockpot to high heat.
  4. Add all remaining ingredients and stir until seasoning packets are combined into sauce. Stir every ½ hour. Cook on high heat for 1-2 hours. Then turn to warm while serving dinner
  5. When ready to serve: warm chili in crockpot and serve with optional toppings, if desired.
