Ingredients
for 2 servings
- ½ yellow onion, chopped or sliced
- ⅓ package bacon
- 1 bell pepper, any color
- 1 lb shrimp (450 g)
- 1 cup rice (200 g), uncooked
- 2 cups water (480 mL)
- 8 oz sour cream (225 g)
- paprika
- curry powder
- cumin
- garlic, minced or garlic powder
- turmeric, optional

Preparation
- Put 1 cup (200 G) of rice in a pot, rinse 3 times, then add 2 cups of salted water. Boil on high heat, then reduce heat until water has evaporated.
- Saute onions, bell pepper, and bacon in a pan on medium high until onions are transparent.
- Boil shrimp (if frozen) in water for 5 minutes. If cooked, add to the skillet as onions become translucent. Season judiciously with desired amounts of curry powder, cumin, paprika, salt, pepper and garlic.
- When cooked and translucent, add sour cream and mix until mixture becomes a gravy or sauce.
- Serve shrimp and veggies atop a bed of rice.
