  • ¾ cup
    crushed walnuts, plus more for topping (75 g)
  • ¼ cup
    bourbon whiskey
  • 12 graham crackers
  • 1 cup
    brown sugar (220 g)
  • ½ cup
    butter, melted (115 g)
  • ½ teaspoon
    vanilla extract
  • ¾ cup
    mini chocolate chips (130 g)
  • 1 cup
    melted chocolate (225 g)
  • 1 tablespoon
    coconut oil

Preparation

  1. In a small bowl, combine the crushed walnuts and bourbon. Cover with plastic wrap and let sit overnight.
  2. Place the graham crackers in a zip-top bag and crush with a rolling pin until the crackers have broken down into crumbs.
  3. In a large bowl, whisk together the brown sugar, melted butter, and vanilla until the sugar is dissolved.
  4. Add the crushed graham crackers, soaked walnuts, and chocolate chips and stir to combine.
  5. Freeze for 10-15 minutes, or until the mixture is firm enough to roll.
  6. Roll the mixture into small balls, then freeze for another 20 minutes.
  7. Add the coconut oil to the melted chocolate and stir to combine.
  8. Coat the balls in the melted chocolate, then sprinkle the tops with crushed walnuts.
  9. Chill in the refrigerator for 1 hour before serving.
