Easy Churro Cheesecake Bars

Ingredients

for 32 servings

  • 2 salted butters, softened
  • 2 cups light brown sugar (400 g)
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 ½ cups all purpose flour (310 g)
  • 1 cream cheese, softened, 1 block
  • 1 egg
  • 3 tablespoons lime juice
  • ¼ cup sugar (50 g)
  • 1 tablespoon cinnamon
  • ¼ teaspoon chili powder
  • ¼ cup sugar (50 g)

Preparation

  1. In a large bowl, cream together butter and brown sugar. Then, add in the eggs and vanilla.
  2. Once combined, add flour, baking powder and salt. Mix gently until you have a smooth dough. Set aside.
  3. In a separate bowl, combine cream cheese, egg, lime juice and sugar until smooth. Set aside.
  4. In another small bowl, mix together the cinnamon, chili powder and remaining ¼ cup of sugar. Set aside.
  5. Line a 9x13 baking dish with parchment paper.
  6. First, sprinkle a third of the cinnamon sugar mixture evenly in the prepared pan.
  7. Spread half of the dough over the cinnamon sugar layer. Then sprinkle another third of the cinnamon sugar mixture over the dough layer.
  8. Add all of the cream cheese mixture, in a layer, next.
  9. Then, spread or plop the remaining cookie dough mixture over the cream cheese layer. Top with the remaining cinnamon sugar mixture.
  10. Bake in a 350°F oven for 35-45 minutes, or until golden brown and no longer jiggly in the middle.
  11. Cool and serve.
  12. Enjoy!
