Feta-Stuffed Falafel Burgers

These feta-stuffed falafel burgers are a tasty vegetarian alternative to traditional meat burgers. The falafel patties are filled with crumbled feta cheese and topped with crispy lettuce and tangy salsa for a fresh and flavorful meal.

Ingredients

for 4 servings

Burger

  • 2 cups chickpeas (400 g), skinned
  • 2 cloves garlic, chopped
  • 1 red onion, roughly chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon harissa paste
  • 2 tablespoons all-purpose flour
  • fresh parsley
  • fresh coriander
  • ⅓ cup feta cheese (50 g)

To Serve

  • 4 buns brioche buns
  • 1 head gem lettuce
  • tomato slices
  • salsa
  • fresh coriander

Preparation

  1. Add all the burger ingredients, except for the feta, to a blender and blend until smooth. (Make sure your chickpeas are very dry first!)
  2. Divide mixture into four balls, then make an indent in the middle.
  3. Place a small block of feta in each indent and roll up again until the feta is completely covered.
  4. Fry in sunflower oil for 5 minutes until brown on each side.
  5. Add to a burger bun with lettuce, tomato, salsa, and coriander.
  6. Enjoy!
