Fruit, Nut And Seed Flapjacks

Ingredients

for 12 servings

  • 2 cups oats (160 g)
  • 2 tablespoons coconut shavings
  • ¼ cup mixed nut (25 g), chopped
  • ¼ cup dried fruit (25 g), of choice
  • 3 tablespoons chia seeds
  • 1 ½ tablespoons ground flaxseed
  • ⅓ cup coconut oil (80 mL), melted
  • 4 tablespoons milk
  • pumpkin seed, optional

Preparation

  1. In a big bowl, mix together oats, chia seeds, flaxseed, coconut shavings, nuts and dried fruit.
  2. Combine melted coconut oil and milk. Once combined, add remaining ingredients and mix to form a ‘dough-like’ mixture.
  3. Spread evenly on a parchment lined baking tray, topping with pumpkin seeds if desired.
  4. Bake at 350’F for 15 - 20 minutes, or until golden-brown.
  5. Let cool, then cut into squares and serve.
