- 4 8-ounce skin-on salmon fillets
- fine sea salt
- freshly ground black pepper
- neutral oil, for greasing
- 2 lemons, halved crosswise

Preparation
- Preheat the grill to medium-high heat.
- Season the salmon with salt and pepper.
- Brush the grill grates with oil, then place the salmon, skin-side down, on the grates. Grill until lightly browned, 3-5 minutes, then gently flip and continue to cook until the fillets are just opaque in the center.
- Add the lemon halves to the grill, cut-side down and grill until lightly charred, about 2 minutes.
- Remove the salmon from the grill and squeeze the grilled lemon halves over.
