  • 4 8-ounce skin-on salmon fillets
  • fine sea salt
  • freshly ground black pepper
  • neutral oil, for greasing
  • 2 lemons, halved crosswise

  1. Preheat the grill to medium-high heat.
  2. Season the salmon with salt and pepper.
  3. Brush the grill grates with oil, then place the salmon, skin-side down, on the grates. Grill until lightly browned, 3-5 minutes, then gently flip and continue to cook until the fillets are just opaque in the center.
  4. Add the lemon halves to the grill, cut-side down and grill until lightly charred, about 2 minutes.
  5. Remove the salmon from the grill and squeeze the grilled lemon halves over.
  6. Enjoy!
