Homemade Banana Bread

Ingredients

for 2 servings

  • 1 cup light brown sugar (200 g)
  • 1 cup white sugar (200 g)
  • 5 bananas, overly ripe
  • ⅔ cup buttermilk (160 mL)
  • 1 cup canola oil (240 mL)
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 egg yolks
  • 2 ½ cups flour (310 g)
  • 2 ½ teaspoons baking soda
  • 2 teaspoons lemon juice

Preparation

  1. In a bowl, mix together brown sugar, white sugar, oil, buttermilk, vanilla, salt, eggs, and egg yolks and let it sit for about 2 hours or until the sugar has dissolved.
  2. After 2 hours, in a separate bowl, combine flour and baking soda. Add this baking soda mixture into the sugar mixture and combine lightly.
  3. Mash the bananas on a flat, covered surface and add lemon juice.
  4. Then, add the mashed bananas to the previous mixture and combine.
  5. Preheat the oven to 350°F.
  6. Grease two loaf pans and pour the mixture into the pans evenly.
  7. Bake for 55 minutes, let cool, slice, and serve.
