Honey Walnut Shrimp

Ingredients

for 4 servings

  • ½ cup cornstarch (60 g)
  • 2 egg whites
  • 3 tablespoons water
  • 12 oz shrimp (340 g), small
  • ¾ cup sugar (150 g)
  • 2 tablespoons brown sugar
  • ½ cup walnuts (50 g)
  • 1 cup water (240 mL)
  • oil, for frying

Sauce:

  • ¼ cup mayonnaise (60 g)
  • 1 tablespoon honey
  • 1 tablespoon condensed milk
  • 1 tablespoon water

Preparation

  1. Mix the egg whites until frothy, then fold them with the cornstarch and 3 tbsp water.
  2. Add the shrimp and coat well. In a saucepan, add the sugars, 1 cup of water, and walnuts. Mix and let it simmer for 12-15 minutes.
  3. Fry the shrimp for a few minutes until golden.
  4. After the walnuts and sugar syrup reduce, lay them on parchment paper to dry.
  5. Mix the sauce ingredients and pour over the shrimp. Top with roasted walnuts.
  6. Garnish with green onions and serve.
