Ingredients
for 9 servings
- ¼ cup pancetta (75 g)
- 6 eggs
- 6 tablespoons cottage cheese
- ½ cup cheddar cheese (50 g), grated
- ½ cup gruyère cheese (50 g), grated
- salt and pepper
- oil, to grease the muffin pan

Preparation
- Fry the pancetta on medium heat. Once cooked, retrieve, set aside, and chop into bite-sized pieces.
- In a bowl, mix the eggs, cheese, and a pinch of salt and pepper together. Add the pancetta.
- Grease a muffin tin well and fill 9 wells with egg mixture, about ¾ full per muffin.
- Bake for 15 mins at 175 ’C. Let cool.
