Hunter’s Eggy Bites

Ingredients

for 9 servings

  • ¼ cup pancetta (75 g)
  • 6 eggs
  • 6 tablespoons cottage cheese
  • ½ cup cheddar cheese (50 g), grated
  • ½ cup gruyère cheese (50 g), grated
  • salt and pepper
  • oil, to grease the muffin pan

Preparation

  1. Fry the pancetta on medium heat. Once cooked, retrieve, set aside, and chop into bite-sized pieces.
  2. In a bowl, mix the eggs, cheese, and a pinch of salt and pepper together. Add the pancetta.
  3. Grease a muffin tin well and fill 9 wells with egg mixture, about ¾ full per muffin.
  4. Bake for 15 mins at 175 ’C. Let cool.
  5. Serve.
