Indian Lamb Chops

Ingredients

for 2 servings

  • 1 lb mutton chops (425 g)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 tablespoons plain yogurt
  • 1 tablespoon red chili powder
  • 1 teaspoon coriander powder
  • 1 tablespoon ginger garlic paste
  • ½ teaspoon garam masala
  • ½ teaspoon salt
  • 1 sprig sprig curry leaves
  • 2 dry red chilies
  • 2 teaspoons sesame oil
  • 1 cup water (240 mL)

Preparation

  1. Mix together the spices, ginger, garlic paste, and water in a bowl.
  2. Trim the lamb chops and marinate in the spice mixture for 30 minutes.
  3. In a pressure cooker, saute the onions and tomatoes. Then add the marinated lamb chops and cook slowly on a low flame for 10 whistles until well done and tender.
  4. Once the lamb is cooked, remove it from the pressure cooker and set aside to cool.
  5. Reduce the remaining liquid in the cooker to form a thick sauce.
  6. Just before serving, grill the lamb chops on a hot griddle with sesame oil. Baste generously with the reduced sauce and serve hot.
