Ingredients
for 6 servings
- 2 lb shrimp (910 g), peeled and cleaned
- 1 stick butter
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 stalks celery, chopped
- 6 cloves garlic, minced
- 1 cup green onion (40 g), chopped
- 1 cup fresh parsley (40 g), chopped
- 1 can tomato sauce
- 1 can diced tomato
- 1 can hot Ro-Tel tomatoes
- 1 can mushroom soup
- 2 cups veggie broth (480 mL)
- 1 tablespoon sugar
- salt and pepper, to taste
- ¼ teaspoon cayenne pepper

Preparation
- Saute garlic, onion, bell pepper, and celery in butter. Add all the cans of tomatoes, broth and mushroom soup and stir well to incorporate.
- Cook covered, on low heat, for 1.5 hours or longer. Add shrimp and cook for another 15 minutes or until done.
- Add green onions and parsley and cook another 10 minutes. Remove from heat.
- Serve over hot rice .
