Lemon Curd Baked Oats

Ingredients

for 1 serving

  • ½ cup oats (40 g)
  • 3 teaspoons vanilla protein powder, or more oats
  • ¼ cup banana (50 g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • ⅓ cup milk (80 mL)
  • 1 teaspoon lemon curd

Preparation

  1. Preheat the oven to 180’C.
  2. Mix all the ingredients except for the lemon curd together. Then, pour ½ the mixture into an oven-safe ramekin, add the lemon curd to the center, then top with the remaining batter.
