Loaded Cauliflower Squares


for 6 servings

  • 4 cups cauliflower rice (400 g)
  • 9 slices bacon, chopped
  • 2 cups mozzarella cheese (230 g)
  • 2 cups fresh spinach (80 g)
  • 2 large eggs

  1. Microwave the cauliflower for 3 to 5 minutes. Drain excess liquid.
  2. Mix together the cauliflower rice, bacon, mozzarella, spinach, and eggs.
  3. Place on a parchment paper-lined baking sheet and form a large rectangle.
  4. Bake at 400°F (200°C) until golden brown.
  5. Cut into 6 servings.
