Ingredients
for 8 servings
- 2 tablespoons unsalted butter, for greasing
- 1 cup cornmeal (150 g)
- 1 cup almond flour (125 g)
- ½ cup sugar (100 g)
- 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 2 eggs, beaten
- ⅔ cup greek yogurt (165 g)
- ⅓ cup milk (80 mL)
- 1 can corn kernel, optional
- 1 jalapeño, finely diced (optional)

Preparation
- Preheat oven to 350°F. Grease a cast iron skillet with butter and set aside.
- Mix together all dry ingredients.
- Add the beaten eggs, yogurt and milk. Mix thoroughly.
- Mix in the corn and jalapeno if using.
- Bake for 18-20 minutes. Transfer to a plate or cutting board and slice into eight pieces. Serve with butter.
