Low-Fat Almond Cornbread

Ingredients

for 8 servings

  • 2 tablespoons unsalted butter, for greasing
  • 1 cup cornmeal (150 g)
  • 1 cup almond flour (125 g)
  • ½ cup sugar (100 g)
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • ⅔ cup greek yogurt (165 g)
  • ⅓ cup milk (80 mL)
  • 1 can corn kernel, optional
  • 1 jalapeño, finely diced (optional)

Preparation

  1. Preheat oven to 350°F. Grease a cast iron skillet with butter and set aside.
  2. Mix together all dry ingredients.
  3. Add the beaten eggs, yogurt and milk. Mix thoroughly.
  4. Mix in the corn and jalapeno if using.
  5. Bake for 18-20 minutes. Transfer to a plate or cutting board and slice into eight pieces. Serve with butter.
