Low Fat, Gluten-Free Vegan Apple Cider Donuts

Ingredients

for 6 servings

Dry:

  • 1 ½ cups millet flour (185 g)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon

Wet

  • ½ cup apple cider (120 g)
  • 5 oz vanilla soy, or almond yogurt
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon liquid Stevia

Coating (optional)

  • ½ cup maple sugar (165 g)
  • 1 teaspoon ground cinnamon

Preparation

  1. Pre-heat the oven to 350 degrees F.
  2. Sift the dry ingredients, then stir in a medium bowl.
  3. In a small bowl, combine the wet ingredients, and stir well. Then, add the wet to the dry ingredients and mix until combined.
  4. Pour the batter evenly into a six-donut baking pan.
  5. Bake for 10-15 minutes, until firm on top and edges. Once baked, remove from the oven.
  6. While the donuts are resting, combine the maple sugar and cinnamon in a small bowl and coat the warm donuts on both sides in the coating.
  7. Serve.
