Mashed Potato Kibbeh Nayeh


for 6 servings

  • 1 potato
  • ½ cup bulgur (100 g)
  • ½ tomato
  • ½ onion
  • 1 ½ teaspoons tomato sauce
  • 1 ½ teaspoons pepper paste
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 3 tablespoons olive oil
  • walnut, for topping

  1. Put the potato in the microwave until cooked (or it can be cooked by boiling it in water.)
  2. Wash the bulgur.
  3. Cut the tomato and onion in very small pieces.
  4. Add bulgur, tomato, and onion in a bowl and keep it for 10 minutes.
  5. Meanwhile, peel the hot potato, mash with a fork or a potato masher.
  6. Add all together and season with cumin, salt, and paprika.
  7. Knead together well. Let it cool.
  8. Flatten onto a serving plate and serve drizzled with the olive oil and walnuts.
  9. Enjoy!
