Ingredients
for 3 servings
- ¼ cup castor sugar (70 g)
- ⅓ cup water (90 mL)
- 3 whole cloves
- 1 smashed cardamom pod
- 1 lemon, sliced
- ½ watermelon, balled
- ½ honeydew melon, balled
- ½ canary melon, balled
- 7 fresh large basil leaves, chiffonaded

Preparation
- First make your light sugar syrup by adding sugar and water in a pan and cook until sugar is dissolved. Then, add in your cloves, cardamom and lemon slice and boil for 5 minutes and set aside.
- Add melon balls to a serving dish. Then, drizzle with sugar syrup and mix in basil. Let sit for 7-10 minutes to marinate.
