Melon Ball Salad

Ingredients

for 3 servings

  • ¼ cup castor sugar (70 g)
  • ⅓ cup water (90 mL)
  • 3 whole cloves
  • 1 smashed cardamom pod
  • 1 lemon, sliced
  • ½ watermelon, balled
  • ½ honeydew melon, balled
  • ½ canary melon, balled
  • 7 fresh large basil leaves, chiffonaded

Preparation

  1. First make your light sugar syrup by adding sugar and water in a pan and cook until sugar is dissolved. Then, add in your cloves, cardamom and lemon slice and boil for 5 minutes and set aside.
  2. Add melon balls to a serving dish. Then, drizzle with sugar syrup and mix in basil. Let sit for 7-10 minutes to marinate.
