Middle Eastern Lemon Pesto

Ingredients

for 16 servings

  • 2 cups sweet basil leaves (80 g)
  • 1 cup italian parsley (40 g)
  • 2 cloves garlic
  • ¼ cup olive oil (60 mL)
  • 2 oz preserved lemon (55 g), chopped
  • ¼ teaspoon ground toasted cumin
  • 1 teaspoon ground toasted coriander
  • 1 teaspoon paprika
  • jalapeño, chopped
  • ½ cup cashews (75 g), toasted
  • ½ teaspoon salt
