Moist Vanilla Bundt Cake

Ingredients

for 15 servings

  • 2 cups all purpose flour (250 g)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ⅓ cups unsalted butter (305 g), room temperature
  • 1 ¾ cups sugar (350 g)
  • 3 eggs, room temperature
  • ⅓ cup oil (80 mL)
  • 1 cup buttermilk (240 mL)
  • 1 tablespoon vanilla extract

GLAZE

  • 2 cups powdered sugar (220 g)
  • 1 tablespoon milk
  • vanilla, a splash

Preparation

  1. Mix flour, salt, baking soda, and powder together in a medium size bowl.
  2. In a separate bowl, cream butter and sugar for about 8 minutes until soft and fluffy.
  3. Add in 1 egg at a time, scraping with each addition.
  4. Mix buttermilk, vanilla, and oil in a medium bowl until incorporated.
  5. Slowly, add ½ of the buttermilk mixture to the butter and sugar, followed by ⅓ of the dry ingredients. Stir together and repeat steps until everything is incorporated well.
  6. Bake for 45 min. at 350°F.
  7. In a small bowl, stir together the ingredients for the glaze. Flavor if desired.
  8. Once the cake has cooled slightly, drizzle glaze on and let set.
  9. Serve.
