Muesli Muffins

Ingredients

for 4 servings

  • ½ cup unsalted butter (115 g), melted
  • 1 cup light brown sugar (200 g), packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz unsweetened applesauce (225 g)
  • 2 cups all purpose flour (250 g), spooned and leveled
  • ¼ cup whole wheat flour (30 g), spooned and leveled
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ¼ teaspoon ground cardamom
  • ½ teaspoon kosher salt
  • 1 ½ cups muesli (45 g)
  • 1 cup date (170 g), chopped
  • ½ cup shredded apple (75 g), peeled and then grated
  • ½ cup buttermilk (120 mL)

Topping:

  • ½ cup muesli (15 g)
  • 2 tablespoons cold butter, cubed
  • 1 tablespoon light brown sugar

Preparation

  1. Preheat the oven to 425° F. Grease or line 2 muffin tins with paper liners.
  2. In a medium bowl, sift together the flours, baking powder, baking soda, cinnamon, nutmeg, allspice, cardamom, and salt. Set aside.
  3. In a stand mixer fitted with the paddle attachment on medium speed, combine the butter, sugar and applesauce.
  4. Turn the mixer down to low and add the eggs, one at a time, blending well after each addition.
  5. Add the vanilla and combine.
  6. With the mixer on low, add the dry ingredients in 3 additions, alternating with the buttermilk in 2 additions.
  7. When the flour is almost completely combined, stop the mixer, raise the head and scrape the batter into the bowl. Remove the bowl from the mixer. Add the grated apple and dates, gently folding to thoroughly combine the batter.
  8. Cover and place the bowl into the refrigerator for an hour.
  9. In a small bowl, combine the topping ingredients together (like a streusel). Set aside.
  10. Divide the batter evenly in the muffin tins, until almost full. Then, top each muffin batter with about a tablespoon of the topping.
  11. Place the muffin tins in the oven and bake for 5 minutes.
  12. After 5 minutes, without opening the oven door, turn the temperature down to 350° F.
  13. Allow the muffins to finish cooking until a toothpick inserted in the center of a muffin comes out with a few crumbs (~13 minutes).
  14. Remove the tins from the oven. Wait 5 minutes and remove the muffins from the tins to cool.
  15. Serve warm.
