Ingredients

for 2 servings

  • 2 cups murungai leaves (200 g), drumstick vegetable
  • 1 tablespoon oil
  • 1 teaspoon black mustard seeds
  • 4 pieces garlic, crushed
  • 2 thai chilis, chopped
  • 1 teaspoon turmeric powder
  • curry leaf
  • 1 teaspoon salt
  • 5 shallots, sliced
  • ½ cup water (120 mL)

Preparation

  1. Add oil to a pan.
  2. Add mustard, curry leaves, onion, garlic and sauté.
  3. Add the murungai leaves and stir for a few minutes.
  4. One softened slightly, add turmeric, salt and chillies. Add water.
  5. Upon boiling of the mixture, reduce to a simmer and cook with a lid on.
  6. *Note: If desired, add ¼ cup unsweetened grated coconut.
  7. Serve alongside steamed basmati or jasmine white rice and ghee.
  8. Enjoy!
