Mushroom And Broccoli Buñuelos

Ingredients

for 6 servings

  • 1 cup milk (250 mL)
  • ½ cup butter (100 g)
  • 1 pinch salt
  • 1 pinch fresh thyme
  • 1 cup flour (125 g)
  • 5 eggs
  • 4 cloves garlic, finely chopped
  • nutmeg, and black pepper
  • 1 cup mushroom (200 g)
  • ½ cup broccoli (150 g)

Preparation

  1. Cook broccoli in boiling water for 3 minutes. Cool in cold water. Set aside.
  2. Bake the mushrooms in the oven at 180º C for 10 minutes. Set aside.
  3. Combine the milk, butter, salt, chopped garlic and nutmeg in a saucepan. Boil, then reduce the heat and pour in all the flour and mix well with a spatula without removing from the heat for 4 minutes.
  4. Remove from the heat and transfer to a bowl.
  5. Add the black pepper and add the eggs, one at a time, incorporating each completely before adding the next.
  6. Finely chop mushrooms and broccoli and add to mixture. Mix well.
  7. With two spoons take small portions in the shape of balls or quenelle and fry in plenty of olive oil.
  8. Serve warm.
