My Mother's Pancake Recipe

My Mother's Pancake Recipe

Ingredients

for 10 servings

  • 6 eggs, separated
  • 2 cups sugar (420 mL)
  • 1 teaspoon salt
  • 1 ½ cups vegetable oil (350 mL)
  • 5 cups milk (1 L)
  • 5 cups flour (630 mL)
  • 2 tablespoons butter

Preparation

  1. Use a mixer to mix egg whites until the color is white and it has a more solid consistency.
  2. Use a mixer to beat egg yolks.
  3. Add all the sugar to egg yolks while continuing to mix. Then, whilst mixing, add the salt, oil, and milk to the mixture (in that order).
  4. Once combined, add all the whipped egg whites while continuing to mix. Then slowly add the flour to create a homogeneous batter. Let this batter sit for an hour.
  5. Put 1 tbsp butter into a pan and pour ⅓ of a ladle of the prepared batter onto a pan. Once the top is dry, use a spatula to flip over.
  6. Wait for 5 seconds and transfer the thin pancake onto the plate.
  7. Top with desired toppings and enjoy!
