Ingredients

for 2 servings

  • ¼ onion, finely chopped
  • 2 cloves garlic, crushed
  • ½ cup baby plum tomatoes (100 g), halved, or regular tomatoes, chopped into small pieces
  • ⅓ cup chopped fresh basil (15 g), plus a few sprigs to decorate
  • ⅓ cup Chopped fresh parsley (15 g)
  • 5 oz linguine (150 g), or spaghetti
  • salt, to taste
  • pepper, to taste
  • 1 pinch red pepper flakes
  • 2 tablespoons olive oil
  • 2 ½ cups cold water (600 mL)
  • parmesan cheese, to garnish

Preparation

  1. Add the onion, garlic, tomatoes, basil, parsley, linguine, salt, pepper, red pepper flakes, olive oil, and water to a large pot. Cook over a high heat for 2 minutes, submerging the pasta into the water once it’s soft enough.
  2. Reduce the heat to medium-low, tossing and stirring continuously until the liquid reduces down into a thick sauce.
  3. Serve the pasta topped with Parmesan and more basil.
