One Pot Taco Soup

One Pot Taco Soup

Ingredients

for 4 servings

  • 1 lb ground beef (455 g)
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 6 cloves garlic, fresh minced
  • 1 can crushed tomato
  • 1 can black beans, undrained
  • 1 cup corn (175 g)
  • ⅛ teaspoon black pepper
  • 1 cup water (240 mL)
  • 3 tablespoons taco seasoning, or you can use 1 pack of taco seasoning
  • sour cream
  • shredded cheddar cheese

Preparation

  1. Brown ground beef in a pan. Drain, then add sliced onion and green peppers and slice for several minutes.
  2. Add minced garlic to the pan and cook for about 2 minutes.
  3. Add black pepper and taco seasoning to the pan, then add a can of black beans and the water. Next, add the corn and the can of crushed tomatoes to the pan and mix well.
  4. Bring everything to a boil, then reduce heat to low and cook for 45 minutes, covered, stirring occasionally
  5. Serve warm, topped with sour cream and shredded cheese.
