Orange Chicken Meatballs

Ingredients

for 6 servings

Meatballs

  • 1 lb ground chicken (425 g)
  • 1 egg
  • ¾ cup panko breadcrumbs (85 g)
  • 3 tablespoons onion, minced
  • 1 teaspoon ginger paste
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Sauce

  • 1 teaspoon sesame oil
  • ½ cup red bell pepper (50 g), sliced
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon orange zest
  • ⅓ cup orange juice (80 mL)
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sweet chili sauce
  • ½ teaspoon red pepper flakes
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • green onion, garnish
  • toasted sesame seed, garnish

Preparation

  1. Meatballs: Preheat the oven to 350°F.
  2. In a large bowl, combine ground chicken, egg, panko breadcrumbs, minced onion, ginger paste, minced garlic, salt, and pepper. Mix ingredients until well-combined.
  3. Spray the baking sheet with cooking spray or use parchment paper to keep the meatballs from sticking. Then, roll the mixture into 16 small meatballs and place on a baking sheet. Bake for 15 minutes, turning once halfway through.
  4. While the meatballs are cooking, prepare the sauce.
  5. Sauce: In a medium size skillet, heat 1 tsp sesame oil. Add ½ cup sliced red bell pepper and cook until the peppers begin to soften.
  6. Add rice wine vinegar, orange juice, soy sauce, brown sugar, sweet chili sauce, and red pepper flakes.Then, simmer sauce for 5 minutes.
  7. Mix cornstarch with water and slowly add mixture to the sauce, continuing to cook until sauce thickens. Then, remove sauce from heat.
  8. Coat each meatball in the sauce.
  9. Serve over rice or with the vegetable of choice and garnish with green onion and toasted sesame seeds.
