Orange Marmalade Christmas Brownie

Ingredients

for 9 servings

  • ½ cup butter (150 g)
  • 1 ½ cups dark chocolate (350 g)
  • 4 tablespoons orange marmalade
  • 4 tablespoons malt extract
  • 4 tablespoons molasses
  • ½ cup honey (100 mL)
  • ½ cup golden syrup (100 mL)
  • 1 cup dark brown sugar (150 g)
  • 4 large eggs
  • 1 cup plain flour (125 g)

Topping (Optional):

  • 1 orange, for topping
  • ½ cup unsalted butter (100 g)
  • ½ cup raw aniseed stars (50 g)

Preparation

  1. Preheat an oven to 160*C
  2. For the topping, slice the orange into thin circular pieces, then halve. In a pot, melt 100g butter and toss orange slices and aniseed stars in melted butter, cooking for 5-8 minutes. Set aside on a paper towel to drain.
  3. For the brownie, melt the butter, dark chocolate, orange marmalade, malt extract, molasses, honey, golden syrup and brown sugar together in a pot. Stir until a smooth melted liquid is formed.
  4. Remove from heat and let cool for 10-15 mins. Add the eggs one at a time, stirring quickly after each egg. Then, add flour and stir quickly.
  5. Pour batter into a greased baking tin and top with prepared orange slices and aniseed topping.
  6. Bake for 40-45 minutes, then cool on a wire rack.
  7. Serve warm.
