Over The Rainbow Cocktail

This fruity rainbow-colored cocktail is topped with a cloud of whipped aquafaba and finished off with touches of edible gold dust, and gold flakes. When pouring the cocktail, hold a spoon to the rim of the glass and pour each color over the spoon to diffuse and make each layer distinct.

Ingredients

for 1 cocktail

Aquafaba Cloud

  • ½ cup aquafaba (120 mL), canned chickpea liquid
  • ¾ teaspoon xanthan gum
  • ½ teaspoon lemon juice
  • ½ cup powdered sugar (55 g)

Red

  • ½ oz grenadine (15 mL)
  • ½ oz coconut-flavored rum (15 mL)

Orange

  • ¾ oz fresh tangerine juice (20 mL)
  • ½ oz orange flavored rum (15 mL)

Yellow

  • 1 oz pineapple juice (30 mL)
  • ½ oz lemon juice (15 mL)
  • ½ oz vodka (15 mL)

Green

  • 2 oz sour apple schnapps (60 g)

Blue

  • ½ oz blue curaçao (15 mL)
  • 1 oz vodka (30 mL)

Assembly

  • ice
  • edible gold dust, for garnish
  • gold flake, for garnish

  • 5 2-ounce shot glasses
  • 1 12-ounce wine glas

Preparation

  1. Make the aquafaba cloud: In a medium bowl, combine the aquafaba, xanthan gum and lemon juice. Whip with an electric hand mixer on medium speed until thick and frothy, about 3 minutes. Add the powdered sugar and continue beating until smooth, about 3 minutes more.
  2. Make the red layer: In a 2-ounce shot glass, combine the grenadine and coconut rum.
  3. Make the orange layer: In a 2-ounce shot glass, combine the tangerine juice and orange rum.
  4. Make the yellow layer: In a 2-ounce shot glass, combine the pineapple juice, lemon juice, and vodka.
  5. Make the green layer: Pour the sour apple schnapps into a 2-ounce shot glass.
  6. Make the blue layer: In a 2-ounce shot glass, combine the blue curaçao and vodka.
  7. Fill a wine glass with ice and pour the red shot over the ice. Place a spoon on the rim of the glass and slowly pour the orange shot over the spoon so it sits atop the red layer. Repeat with the yellow shot, green shot, and blue shot.
  8. Dollop the aquafaba cloud on top and garnish with gold dust and gold flakes.
