Palada Payasam

Ingredients

for 4 servings

  • 5 cups water (1 L)
  • 9 cups milk (2 L)
  • 1 cup rice flakes (200 g)
  • 1 cup sugar (200 g)
  • 1 teaspoon ghee
  • 8 cardamom seeds, (ground into a fine powder)

Preparation

  1. Take a pot of boiling water (~4 litres boiling water) and add ada.
  2. Turn off the heat and rest for half an hour. Then, filter the water and wash the ada 3 or 4
  3. Place a thick, sturdy pot on high heat and add ½ litre of water. Bring to a boil.
  4. Then, add 2 litres of milk. After reaching a rolling boil, add 1 tbsp ghee and 2 tbsp sugar 5. Stir until the milk becomes light brown, at which point, lower the heat to low heat. The quantity of the milk will have reduced to ⅓ its original volume and the consistency should be thicker.
  5. At this point, filter the water containing the ada and add to the pot.
  6. Boil on high heat, adding cardamom powder boil until you reach a thick, pudding-like consistency.
  7. Finally, add sugar and take off heat. Stir and keep covered for 30 minutes to allow ingredients to mix.
  8. Mix well and serve.
