Paleo Chocolate Mousse

Ingredients

for 4 servings

  • 6 oz
    unsweetened chocolate, cubed (170 g)
  • 12 oz
    coconut cream, additive/BPA-free organic, refrigerated overnight (360 g)
  • 4 oz
    all natural coconut milk (120 mL)
  • β…“ cup
    unprocessed organic honey (120 g)
  • 1 teaspoon
    pure vanilla extract

Preparation

  1. In a small microwave-safe bowl, microwave chocolate on medium-high heat in 30-second intervals, stirring in between, until chocolate is melted. Let cool.
  2. In a medium-size bowl, add the coconut cream, coconut milk, honey, and vanilla. Whisk until incorporated.
  3. Fold in the melted chocolate.
  4. Divide evenly among ramekins. Refrigerate for 1 hour.
  5. Garnish to your liking.
  6. Enjoy!
