- 3 large carrots, roasted and diced
- 6 oz fresh baby spinach (175 g)
- 4 whole wheat tortillas
- 2 oz goat cheese (55 g)

Preparation
- Roast carrots at 425°F for 20 minutes, or until the carrots are tender.
