Roasted Carrot, Spinach And Goat Cheese Quesadilla

Ingredients

for 2 servings

  • 3 large carrots, roasted and diced
  • 6 oz fresh baby spinach (175 g)
  • 4 whole wheat tortillas
  • 2 oz goat cheese (55 g)

Preparation

  1. Roast carrots at 425°F for 20 minutes, or until the carrots are tender.
