  • 12 oz Marketside® Butternut Squash (325 g)
  • kosher salt
  • ground black pepper
  • 1 Marketside® Traditional Rotisserie Chicken, light meat
  • 2 cups tomato salad (400 g)
  • ¼ cup red wine vinaigrette (60 mL)
  • 1 lb summer squash (455 g), roasted

  1. Using a fork, poke holes into the butternut squash package.
  2. Place package in microwave for 2–4 minutes, or until butternut squash is tender.
  3. Season butternut squash with salt and ground black pepper to taste.
  4. Separate the 2 wings and 2 breasts from the chicken.
  5. Dress tomato salad with vinaigrette.
  6. Plate chicken with steamed butternut squash, tomato salad, and summer squash.
